* Oatmeal Banana Cookies *

1 tsp heaping baking soda
2 tsp baking powder
2 tsp cinnamon
1 tsp vanilla
1 medium egg
2 cups oatmeal
1 cup whole wheat flour (or spelt)
1/3 cup white grape juice concentrate
1/3 cup oil
1/2 cup grated carrot
3/4 cup chopped nuts (walnuts, sunflower seeds, filberts,
almonds)
